Homemade Hummus
A smooth and creamy hummus, drizzled with extra virgin olive oil and smoked paprika.

Ingredients

- Canned chickpeas400 g
- Tahini (sesame paste)3 tablespoons
- Lemon juice2 tablespoons
- Garlic1 clove
- Extra virgin olive oil4 tablespoons
- Ice water3 tablespoons
- Ground cumin0.5 teaspoon
- Smoked paprikafor garnish
- Saltto taste
Always use Carthage Crown extra virgin olive oil raw to preserve all its aromas.
Preparation
Prepare the chickpeas
Rinse and drain the chickpeas. For extra smooth hummus, rub the chickpeas between your hands to remove the skins.
Blend
In a food processor, blend the tahini and lemon juice for 1 minute. Add garlic, cumin, and salt. Blend again. Add the chickpeas and blend for 2-3 minutes.
Adjust texture
With the processor running, add ice water spoon by spoon and 2 tablespoons of olive oil. Blend until very smooth and creamy.
Serve
Spread the hummus in a shallow bowl, creating waves with the back of a spoon. Make a well in the center. Pour in the remaining Carthage Crown olive oil. Sprinkle with smoked paprika.
